The company Autóctonas Cárnicas de Canarias (ACC) has launched a brand to promote black pig meat, Canary black cord, which was born with the vocation of uniting the primary sector with tourism and restaurants around a top quality product and unique flavor.
The president of the Association of Black Pig Breeders of the Canary Islands and founding partner of ACC, Rafael Riera, explains that the company carries out, since just over three months, different tests with restaurants and hotels in Gran Canaria, that already has a portfolio of 30 customers and that it maintains conversations to expand its lines of trade.
Like this, Riera specifies that they already manage the incorporation of its products into gourmet areas of the large stores that bet on local productions, in addition to entering the shelves of some stores specialized in the sale of Iberian products.
Rafael Riera has indicated that, right now, The ACC company has its parent company and one of the two associated farms -Gestión Ganadera Canaria- in the municipality of San Mateo (Gran Canaria), and that the other exploitation is located in Telde, with those who control some 59 breeding females and three purebred males.
“We are studying bringing together more farms around this project and we are already inspecting a farm in Fuerteventura to continue working with a very high quality product.”, has highlighted Riera.
The president of the Association of Black Pig Breeders of the Canary Islands has revealed that in the past week they have been marketed 500 kilos of different products, from suckling pig or meat pieces of ribs and chops, to products made such as chistorra, grilled sausages and hamburger.
Riera has recognized that the products of the Canarian black pig “They are not for all audiences”, since the reduced exploitation causes the price to be much higher than that of the white pig, whether its European or national origin.
“This is a handicap for the marketing of this meat and, as well, what is the picaresque and the fraud that surrounds it in Gran Canaria, since they sell products that lack certificates or are from uncontrolled specimens such as black canary pig”, the manager has stressed.
Although this meat can coexist with avant-garde fusion cuisine, Riera advises the consumer not to blend or disguise it with sauces or condiments., while encouraging you to enjoy its flavor according to the parameters of “intensity and quality”.
