PROMOTERS OF THE INITIATIVE EXPORT PRODUCTION TO EUROPE.

In the Canary Islands we know of its consumption, but nothing compared to the presence in the cuisine and gastronomy of South America. Here, the pepper of the “mother's p”, how is it known, is the essence of mojos and dressings of some dishes. That is why its cultivation does not have large areas in the Canary Islands.
However, the initiative of its cultivation that has been launched in Lanzarote, exports chili peppers to a large part of Europe. Its authors are Josefina and Niko, a couple from Germany dedicated to fair trade and organic farming for a long time.

The farmer who grows them is José María Guerra, owner of the Finca La Sarantontona, located in Muñique, that it has the necessary conditions to grow these peppers. The rest is done by the wind and dry weather that gives them an intense flavor.

In addition to cultivation and harvesting, what guarantees the maximum quality and essence of these peppers when they arrive in Europe, is the freeze drying process, which consists of drying through freezing, and that allows to preserve its flavor and aroma.

The rest is done by the excellent presentation of the product in two different packages that allow its trade anywhere in the world., through its website “the love of chilies”.

In fact, on the website, Josefina and Niko, make mention of how one of the most central cafes in Berlin, the “Café am Neuen See” serves “deliciously crispy” pizzas seasoned with these chilies from Lanzarote, what poetically comes to define as "portions of lava charged with heat".
