For this, we had the collaboration of Professor Luis Antonio González Mendoza. (University of La Laguna) who gave an interesting lecture on the history, culture, tradition and process of making Flor Cheese, unique in Gran Canaria with Protected Designation of Origin.

In addition to the conference, Attendees were able to see on the stage of the Auditorium the completely handmade production of this unique product., from the coagulation of milk with vegetable rennet to manual pressing in the cheese factory.
