The color is obtained by adding to the process of developing a natural pigment, called indigotine.
Tasting blind may go through different kinds of wines, from Muscat, Blush, semi-sweet... If we take off the blindfolds we see a totally different from all known wine, Blue and with 11'5 degrees of alcohol. That's GIK, Blue wine.
Two years have been those who have passed since that a group of five young, in collaboration with the University of the Basque country and the Centre Azti Tecnalia, they have time to develop and bring to market the first blue wine of the world: "Gik”.
A taste and stunning indigo blue, they say, something sweet, soft and pleasant to the palate, These "senseless" five are revolutionizing the world of wine with this blue wine. A color that is obtained by adding to the process of developing a natural pigment, called indigotine, making that the final result has this peculiar color.
Despite the fact that in our country, by norm, It cannot be properly wine, the right thing would be to call it 'aromatized wine-based drink', GIK is making a dent in the best terraces with their particular colour bars, its peculiar taste and, above all, because it is on everyone's lips, either to enjoy or to put 'green'.
Its promoters explained that "we do not work with grapes, We work with people. Our wine comes from different Spanish wineries, whose grapes we transform into blue wine. We choose these wineries based on the people who work in them. I.e., We do not work with grapes, We work with people, Why Gik has no denomination of origin, "but a guarantee of quality and a unique flavor".
GIK is located on the border of the established; There is no history for a wine whose colour, flavor and aroma have been altered. You are drinking something innovative; a new drink that dissociates completely in the world of wine.
For which blue?
Psychology of color, the Blue represents the movement, innovation and the infinite. It is also a color associated with the fluidity and change.
Deeper is the blue, is its ability to attract man; Infinity appealed to the desire for spirituality and purity. -V. Kandinsky
We got the blue on technological processes of pigmentation of the grape. This technology has been developed for the r & d of Gik in collaboration with the Faculty of engineering of the UPV-EHU and companies in the sector of the agri-food technology.
Quality controls are rigorous and all used items follow the standards for food products in the European Union.
GIK has no added sugars. First of all, because the sugar ferments and becomes alcohol into the bottle. Second, because excess sugars generates overweight, While the sweeteners are healthier and more stable alternative.
Our processes are regulated by the European Food Safety Authority and have received the approval of the institutions evaluating continuously the safety and conditions of use.
