There are no vineyards on their lands, in fact, Pascal Miche planted 6.200 tomato plants for the production of your wine. The recipe, out of the ordinary, was created by his great-grandfather. This is a big family secret.. This wine is not produced anywhere else in the world but in the Charlevoix region, Quebec, Canada.
Pascal Miche is forty years old and of Belgian origin. He settled in Quebec six years ago and decided to leave his career to start this wine experience.. I wanted to finish what my great-grandfather started in 1930, explains Miche. He named his wine Omerto, which comes from the name of his relative, Omer.
To reach the wine, Pascal Miche tried 16 tomato species before choosing the six that are most resistant to Quebec's climate: red tomatoes of the sub-arctic variety, yellows and blacks Black Cherry. He carefully chooses his tomatoes and then uses the same processes that apply to grape wine.
Tomato transformation
in wine it lasts about nine months, after which a clear liquid is obtained, dorado, with 18% of alcohol. To do this, it uses the same process that is used for grapes.: subject the tomatoes to crushing, pressing, liquefying and maceration.
To be able to name your drink as a wine, Pascal Miche had to convince the authorities that the tomato is a fruit. He did exhaustive research on the matter and found references to the different types of tomato dating back to the 15th century..
Let sommelier Elen Garon, of the restaurant La Ferme in Baie-Saint-Paul, is struggling to define the product, like most of his colleagues. for her, Miche's wine has fruity notes, a very present spicy side, and spicy flavor (…) the hint of honey could be very interesting for desserts and spices, dice.
Pascal Miche produce 34.000 bottles per campaign of this new wine, one of a kind. Miche began to revamp the promotion of its tomato wine a year ago, dedicating most of his energy to promoting his family's recipe throughout the province, presenting it in the tasting rooms, and offering the bottle to some 25 $ (20 EUR) the bottle of 375 ml in a few points of sale in Quebec.
For now your tomato wine is
sold only in Canada, but Miche is working on distribution projects in the United States and Europe, especially in France, Germany and Benelux.
